This isn’t your average backyard burger. The La Vita Bianca Burger brings together juicy beef, roasted garlic Parmesan aioli, creamy burrata, crispy prosciutto, slow-roasted tomatoes, and peppery arugula on a buttery toasted brioche bun. It’s everything you love about a classic burger with an elegant Italian-inspired twist that’s worthy of your favorite restaurant.
When a Burger Deserves a Little More
Every once in a while, a burger deserves to be more than just a burger.
I wanted something that felt indulgent without being heavy, a burger built around simple, high-quality ingredients that each get their moment.
The foundation is a juicy ground chuck patty seasoned just enough to enhance the beef instead of masking it. A little Parmesan, fresh garlic, Worcestershire, and parsley quietly build flavor while still letting the meat remain the star.
The roasted garlic Parmesan aioli might be my favorite part. Roasting garlic completely transforms it, turning its sharp bite into something mellow, buttery, and almost sweet. Mixed into a creamy aioli with Parmesan and a squeeze of lemon, it becomes the perfect spread for every layer of the burger.
Then come the toppings. Creamy burrata melts slightly over the warm patty, crispy prosciutto adds just the right amount of crunch and saltiness, while slow-roasted tomatoes bring concentrated sweetness that balances every bite. I always toss the arugula with a little olive oil and fresh lemon juice before adding it. It brightens the entire burger and keeps it from feeling too rich.
One of the biggest mistakes people make with burgers is overworking the meat. Mix the ingredients only until they’re combined and gently shape the patties. The less you handle the beef, the more tender and juicy the finished burger will be. And don’t skip letting the burgers rest for a few minutes before assembling. Those few minutes allow the juices to redistribute throughout the meat instead of running onto the plate.
Notes:
- Use high-quality ground chuck. An 80/20 blend provides the perfect balance of flavor and juiciness.
- Don’t overmix the meat. Gently combine the ingredients just until incorporated. Overworking the beef can result in dense, tough burgers.
- Press an indentation into each patty. A small dimple in the center helps the burgers cook evenly and prevents them from puffing up on the grill.
- Let the burgers rest. Allow them to rest for 5 minutes after cooking so the juices redistribute throughout the meat.
- Roasted Garlic: Slice about ¼ inch off the top of a whole head of garlic, drizzle with olive oil, wrap in foil, and roast at 400°F (205°C) for 40–45 minutes, or until the cloves are soft and caramelized. Squeeze the roasted garlic into the aioli for a sweeter, mellow garlic flavor.
- Crispy Prosciutto: Arrange the prosciutto slices on a parchment-lined baking sheet and bake at 375°F (190°C) for 8–12 minutes, until crisp. Let them cool for a few minutes, they’ll continue to crisp as they cool. Add them to the burger just before serving for the best texture.
- Dress the arugula just before assembling. A light toss with olive oil and fresh lemon juice keeps it vibrant and prevents it from wilting.
- Use fresh burrata. Tear it open just before assembling so its creamy center gently melts over the warm burger.
- Finish with lemon zest and flaky sea salt. These simple finishing touches brighten the rich flavors and make the burger taste restaurant-worthy.
As I was making these burgers, I couldn’t help but think about the meals we gather around the table for.
It’s the kind of burger that feels equally at home at a weekend cookout or a dinner where you want to impress someone without making the meal feel overly formal. Sometimes, all it takes is good ingredients, a little patience, and people to share them with. - 2 tsp Worcestershire sauce
- 2 cloves garlic, finely grated
- 2 tbsp (10 g) finely grated Parmesan
- 1 tbsp fresh parsley, chopped
- ½ tsp onion powder
- ½ cup (120 g) mayonnaise
- 1 whole head roasted garlic, cloves squeezed from the skins
- 2 tbsp (10 g) finely grated Parmesan
- 1 tsp fresh lemon juice
- Freshly cracked black pepper, to taste
- 4 brioche buns

- 8 oz (225 g) burrata
