- 3 lbs chicken wings, split and patted very dry
- 3 tbsp extra-virgin olive oil
- Zest of 1 lemon
- 5 garlic cloves, finely grated
- 2 tbsp finely chopped fresh parsley
- 1 tbsp finely chopped fresh oregano (or 1 tsp dried)
- 1 tsp kosher salt
- 1 tsp freshly cracked black pepper
