La Vita Bianca Burger
This isn’t your average backyard burger. The La Vita Bianca Burger brings together juicy beef, roasted garlic Parmesan aioli, creamy burrata, crispy prosciutto, slow-roasted tomatoes, and peppery arugula on a buttery toasted brioche bun. It’s everything you love about a classic burger with an elegant Italian-inspired twist that’s worthy of your favorite restaurant.
Ingredients
For the Burgers
- 1½ lbs (680 g) 80/20 ground chuck
- 1½ tsp kosher salt
- 1 tsp freshly cracked black pepper
- 2 tsp Worcestershire sauce
- 2 cloves garlic, finely grated
- 2 tbsp (10 g) finely grated Parmesan
- 1 tbsp fresh parsley, chopped
- ½ tsp onion powder
Roasted Garlic Parmesan Aioli
- ½ cup (120 g) mayonnaise
- 1 whole head roasted garlic, cloves squeezed from the skins
- 2 tbsp (10 g) finely grated Parmesan
- 1 tsp fresh lemon juice
- Freshly cracked black pepper, to taste
For Assembly
- 4 brioche buns
- Butter, for toasting
- 8 slices crispy prosciutto
- 8 oz (225 g) burrata
- 1 cup baby arugula
- 1 tsp olive oil
- Squeeze of fresh lemon juice
- 8–10 slow-roasted tomatoes
- Fresh basil leaves
- Flaky sea salt
- Fresh lemon zest, for finishing
Instructions
- Make the Roasted Garlic Parmesan Aioli
In a small bowl, combine:
- Mayonnaise
- Roasted garlic
- Parmesan
- Lemon juice
- Black pepper
Mix until smooth and refrigerate while preparing the burgers.
- Prepare the Burger Patties
In a large bowl, gently combine:
- Ground chuck
- Kosher salt
- Black pepper
- Worcestershire sauce
- Garlic
- Parmesan
- Parsley
- Onion powder
Mix just until incorporated. Divide into four equal portions and shape into patties about ¾ inch thick. Press a slight indentation into the center of each patty to help them cook evenly.
- Toast the Buns
Butter the cut sides of the brioche buns. Toast until golden brown.
- Cook the Burgers
Grill or cook the patties in a cast-iron skillet over medium-high heat. Cook for about 3–4 minutes per side for medium, or to your preferred doneness.
Transfer to a plate and let the burgers rest for 5 minutes.
- Dress the Arugula
Toss the baby arugula with the olive oil and a squeeze of fresh lemon juice.
- Assemble
Spread a generous layer of roasted garlic Parmesan aioli on both toasted bun halves.
Layer the bottom bun with:
- Burger patty
- Torn burrata
- Crispy prosciutto
- Slow-roasted tomatoes
- Lemon-dressed arugula
- Fresh basil leaves
Finish with a light sprinkle of flaky sea salt over the burrata and a little fresh lemon zest before placing the top bun on the burger.
Serve immediately.
