Baby Yukon gold potatoes tossed in a bright lemon vinaigrette with fresh herbs and shaved Parmesan, a lighter, Italian-inspired twist on classic potato salad, perfect alongside grilled meats. Perfect for summer days.

The Potato Salad That Belongs at Every Summer Table

There will always be a place for a classic creamy potato salad, but sometimes I want something a little lighter while still being just as satisfying.

This Italian-inspired version has become my summer staple. Warm baby Yukon Gold potatoes soak up a bright lemon vinaigrette, then get tossed with fresh parsley, basil, chives, and plenty of shaved Parmesan.

It’s simple, fresh, and exactly the kind of side dish that belongs on a table surrounded by grilled chicken, burgers, friends, and family.

And somehow, it’s always the bowl that empties first.

One of the most important steps is dressing the potatoes while they’re still warm. Warm potatoes absorb the vinaigrette beautifully, carrying the flavor all the way through instead of just coating the outside.

I love using baby Yukon Gold potatoes because they’re naturally buttery and hold their shape beautifully after boiling. Gently smashing or halving them creates little nooks and crannies where the dressing can settle, making every bite even more flavorful.

The fresh herbs are what truly give this salad its Italian personality. Parsley, basil, and chives add freshness, while shaved Parmesan melts ever so slightly into the warm potatoes, creating little pockets of savory goodness throughout the salad.

Notes

  • Dress the potatoes while they’re still warm so they absorb the vinaigrette instead of simply being coated by it.
  • Baby Yukon Gold potatoes have a naturally buttery texture and hold their shape beautifully after boiling.
  • Gently smashing the potatoes creates more surface area for the dressing to cling to.
  • Fresh herbs make all the difference, use them whenever possible for the brightest flavor.
  • Shave the Parmesan instead of grating it for beautiful ribbons that soften slightly against the warm potatoes.
  • Crispy pancetta adds a wonderful salty crunch, but the salad is just as delicious without it.
  • This salad can be served warm, at room temperature, or chilled.
  • It pairs beautifully with the La Vita Bianca Burger, grilled chicken, grilled wings, seafood, or grilled asparagus for an effortless summer meal.

If I’m serving this for guests, I’ll often finish it with crispy pancetta for a bit of crunch or finely diced shallot for extra bite. Neither is necessary, but both are wonderful additions if you want to dress it up.

For My Daughter's Journal

This is one of those recipes I hope you’ll make again and again. My sweet girl, I hope one day you’ll discover that the simplest side dishes are often the ones everyone remembers. A bowl of warm potatoes, good olive oil, fresh herbs, and Parmesan may not seem extraordinary, but shared around a table with family, they become something special.

La Vita Bianca Italian Potato Salad

This is the kind of potato salad I find myself making all summer long. Instead of a heavy, mayo-based dressing, it’s tossed with a bright lemon vinaigrette, fresh herbs, and plenty of Parmesan for a lighter, Italian-inspired twist. It’s simple, fresh, and the perfect side for grilled meats, seafood, or just about anything coming off the barbecue.

Ingredients:

  • 1½ lbs (680 g) baby Yukon Gold potatoes
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • Juice of ½ lemon
  • 1 tsp Dijon mustard
  • 1 small garlic clove, grated
  • Kosher salt
  • Freshly cracked black pepper
  • 2 tbsp chopped fresh parsley
  • 1 tbsp chopped fresh basil
  • 1 tbsp chopped fresh chives
  • ¼ cup finely shaved Parmesan
Optional
  • Finely diced shallot
  • Crispy pancetta, for serving

Instructions:

  1. Cook the Potatoes
Place the baby potatoes in a large pot of heavily salted water. Bring to a boil and cook until just fork tender, about 15–20 minutes. Drain and allow them to steam dry for a few minutes.
  1. Prepare the Potatoes
While still warm, gently smash or halve the potatoes so they can better absorb the dressing.
  1. Make the Dressing
In a small bowl, whisk together:
  • Extra-virgin olive oil
  • Red wine vinegar
  • Lemon juice
  • Dijon mustard
  • Grated garlic
  • Kosher salt
  • Freshly cracked black pepper
  1. Assemble
Toss the warm potatoes with the dressing until evenly coated. Fold in the parsley, basil, chives, and diced shallot, if using. Finish with shaved Parmesan and a drizzle of your best extra-virgin olive oil. If desired, scatter crispy pancetta over the top just before serving
