This tart was inspired by that exact feeling.

Rather than recreating an Aperol Spritz in dessert form, the goal was to capture its spirit. Fresh oranges remain the star, while Aperol adds just enough bittersweet citrus to bring balance and complexity without overpowering the delicate flavors.

Everything begins with a buttery orange shortcrust pastry. Orange zest perfumes the dough while a touch of powdered sugar creates a tender, lightly sweet crust. One small bakery trick makes an even bigger difference: replacing a tablespoon of the ice water with ice-cold vodka. Since alcohol doesn’t encourage gluten development the way water does, it creates an exceptionally flaky, delicate pastry that bakes up beautifully crisp. Don’t worry, the alcohol bakes off completely.

For an extra layer of insurance against a soggy crust, brush the tart shell with beaten egg white during the last few minutes of baking. It creates an invisible barrier that keeps the pastry crisp even after it’s filled.

Ingredients:

Orange Shortcrust Pastry
  • 180 g (1½ cups) all-purpose flour
  • 30 g (¼ cup) powdered sugar
  • Zest of 1 orange
  • ¼ teaspoon fine salt
  • 113 g (½ cup) cold unsalted butter, cubed
  • 1 egg yolk
  • 1 tablespoon ice-cold vodka (optional but recommended)
  • 1–2 tablespoons ice water, as needed
Vanilla Bean Mascarpone Pastry Cream
  • 1 cup whole milk
  • ½ cup heavy cream
  • ¼ cup granulated sugar, divided
  • 3 egg yolks
  • 2½ tablespoons cornstarch
  • 1 teaspoon vanilla bean paste
  • 4 oz mascarpone, softened
  • 1 tablespoon unsalted butter
Aperol-Orange Curd
  • ½ cup fresh orange juice
  • 1 tablespoon fresh lemon juice
  • Zest of 1 orange
  • 4 egg yolks
  • ⅓ cup granulated sugar
  • 2 tablespoons Aperol
  • 3 tablespoons unsalted butter
Garnish (Optional)
    • Fresh orange zest
    • Thin orange slices
    • Candied orange slices or candied orange peel

Instructions:

Prepare the Orange Shortcrust Pastry
  1. Whisk together the flour, powdered sugar, orange zest, and salt.
  2. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs with pea-sized pieces.
  3. Stir in the egg yolk, followed by the vodka if using. Add just enough ice water for the dough to come together.
  4. Shape into a disc, wrap tightly, and refrigerate for at least 1 hour.
  5. Roll the dough into a 10–11-inch circle and press it into a 9-inch tart pan. Trim the edges and prick the base with a fork.
  6. Freeze the tart shell for 15–20 minutes.
  7. Line with parchment paper and pie weights, then blind bake at 350°F (175°C) for 15 minutes.
  8. Remove the weights and bake for another 8–10 minutes, until deeply golden. During the final 2–3 minutes, brush the crust lightly with beaten egg white.
  9. Allow the tart shell to cool completely.
Make the Vanilla Bean Mascarpone Pastry Cream
  1. In a saucepan, heat the milk, heavy cream, and half of the sugar until steaming.
  2. In a separate bowl, whisk together the egg yolks, remaining sugar, and cornstarch.
  3. Slowly whisk the hot milk mixture into the egg yolks.
  4. Return everything to the saucepan and cook over medium heat, whisking constantly until thickened.
  5. Remove from the heat and stir in the butter and vanilla bean paste.
  6. Let cool for 10–15 minutes, then whisk in the softened mascarpone until smooth and silky.
  7. Cover with plastic wrap pressed directly onto the surface and refrigerate for 2–3 hours, or until completely chilled.
Make the Aperol-Orange Curd
  1. Whisk together the orange juice, lemon juice, orange zest, egg yolks, and sugar.
  2. Cook over medium-low heat, whisking constantly and scraping the bottom and corners of the pan.
  3. Continue cooking for 8–12 minutes, until the curd reaches 170–175°F (77–79°C) and resembles a loose pudding while warm.
  4. Remove from the heat and whisk in the butter until completely smooth.
  5. Stir in the Aperol.
  6. Strain through a fine-mesh sieve into a clean bowl for an ultra-smooth finish.
  7. Cover with plastic wrap touching the surface and refrigerate until fully chilled.
Assemble the Tart
  1. Fill the cooled tart shell with the chilled vanilla bean mascarpone pastry cream and smooth into an even layer.
  2. Refrigerate for 20–30 minutes.
  3. Spread the chilled Aperol-orange curd evenly over the pastry cream.
  4. Garnish with fresh orange slices, candied oranges, orange zest, or candied peel.
  5. Chill for at least 3 hours, preferably overnight, before slicing and serving.
