Aperitivo Citrus Tart
Inspired by the golden hour tradition of an Italian aperitivo, this elegant citrus tart combines a buttery orange shortcrust pastry with silky vanilla bean mascarpone pastry cream and a glossy Aperol-orange curd. Bright, fresh, and beautifully balanced, it’s the perfect dessert for spring and summer gatherings, dinner parties, or whenever you’re craving a little taste of Italy.
Ingredients
Orange Shortcrust Pastry
- 180 g (1½ cups) all-purpose flour
- 30 g (¼ cup) powdered sugar
- Zest of 1 orange
- ¼ teaspoon fine salt
- 113 g (½ cup) cold unsalted butter, cubed
- 1 egg yolk
- 1 tablespoon ice-cold vodka (optional but recommended)
- 1–2 tablespoons ice water, as needed
Vanilla Bean Mascarpone Pastry Cream
- 1 cup whole milk
- ½ cup heavy cream
- ¼ cup granulated sugar, divided
- 3 egg yolks
- 2½ tablespoons cornstarch
- 1 teaspoon vanilla bean paste
- 4 oz mascarpone, softened
- 1 tablespoon unsalted butter
Aperol-Orange Curd
- ½ cup fresh orange juice
- 1 tablespoon fresh lemon juice
- Zest of 1 orange
- 4 egg yolks
- ⅓ cup granulated sugar
- 2 tablespoons Aperol
- 3 tablespoons unsalted butter
Garnish (Optional)

- Thin orange slices
- Candied orange slices or candied orange peel
Instructions
Prepare the Orange Shortcrust Pastry
- Whisk together the flour, powdered sugar, orange zest, and salt.
- Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs with pea-sized pieces.
- Stir in the egg yolk, followed by the vodka if using. Add just enough ice water for the dough to come together.
- Shape into a disc, wrap tightly, and refrigerate for at least 1 hour.
- Roll the dough into a 10–11-inch circle and press it into a 9-inch tart pan. Trim the edges and prick the base with a fork.
- Freeze the tart shell for 15–20 minutes.
- Line with parchment paper and pie weights, then blind bake at 350°F (175°C) for 15 minutes.
- Remove the weights and bake for another 8–10 minutes, until deeply golden. During the final 2–3 minutes, brush the crust lightly with beaten egg white.
- Allow the tart shell to cool completely.
Make the Vanilla Bean Mascarpone Pastry Cream
- In a saucepan, heat the milk, heavy cream, and half of the sugar until steaming.
- In a separate bowl, whisk together the egg yolks, remaining sugar, and cornstarch.
- Slowly whisk the hot milk mixture into the egg yolks.
- Return everything to the saucepan and cook over medium heat, whisking constantly until thickened.
- Remove from the heat and stir in the butter and vanilla bean paste.
- Let cool for 10–15 minutes, then whisk in the softened mascarpone until smooth and silky.
- Cover with plastic wrap pressed directly onto the surface and refrigerate for 2–3 hours, or until completely chilled.
Make the Aperol-Orange Curd
- Whisk together the orange juice, lemon juice, orange zest, egg yolks, and sugar.
- Cook over medium-low heat, whisking constantly and scraping the bottom and corners of the pan.
- Continue cooking for 8–12 minutes, until the curd reaches 170–175°F (77–79°C) and resembles a loose pudding while warm.
- Remove from the heat and whisk in the butter until completely smooth.
- Stir in the Aperol.
- Strain through a fine-mesh sieve into a clean bowl for an ultra-smooth finish.
- Cover with plastic wrap touching the surface and refrigerate until fully chilled.
Assemble the Tart
- Fill the cooled tart shell with the chilled vanilla bean mascarpone pastry cream and smooth into an even layer.
- Refrigerate for 20–30 minutes.
- Spread the chilled Aperol-orange curd evenly over the pastry cream.
- Garnish with fresh orange slices, candied oranges, orange zest, or candied peel.
- Chill for at least 3 hours, preferably overnight, before slicing and serving.
