Simple recipes are often the ones we make again and again. These Italian Grilled Chicken Thighs are bright, flavorful, and incredibly juicy thanks to a lemon, garlic, and herb marinade. They’re perfect for an easy weeknight dinner but special enough to serve when family comes over, proof that the best meals don’t have to be complicated.

Some of the best recipes aren’t the ones with the longest ingredient lists, they’re the ones you know by heart because you’ve made them so many times.

This is one of those recipes for me. 

Fresh lemon, garlic, herbs, Parmesan, and olive oil create a simple Italian-inspired marinade that makes these chicken thighs incredibly flavorful and juicy. They’re dependable enough for a weeknight dinner but special enough to put on the table when family or friends are coming over.

I love recipes that can do both, make an ordinary dinner feel easy and a gathering feel effortless.

One of the biggest advantages of using chicken thighs is how forgiving they are. Unlike chicken breasts, thighs actually become more tender when cooked slightly beyond 165°F. I like to cook them until they reach 175–185°F, giving the connective tissue enough time to break down so every bite stays juicy and flavorful.

Once the chicken comes off the grill, don’t skip the finishing touches. A squeeze of fresh lemon, a drizzle of good olive oil, chopped parsley, and a light dusting of Parmesan make the flavors taste even brighter and fresher.

Notes:

  • Marinating overnight gives the chicken the deepest flavor, but even 4 hours makes a noticeable difference.
  • Let the chicken sit at room temperature for about 20 minutes before grilling for more even cooking.
  • Allow the chicken to rest for 5 minutes before serving to keep it juicy.
  • If flare-ups occur on the grill because of the olive oil, simply move the chicken to a cooler area until the flames subside.
  • Freshly grated Parmesan melts beautifully into the warm chicken and adds the perfect finishing touch.

Ingredients:

  • 2–2½ lbs boneless, skinless chicken thighs
  • ¼ cup extra-virgin olive oil
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 5 garlic cloves, grated
  • 1 tbsp Dijon mustard
  • 2 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 tsp dried oregano
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil, chopped
  • 1 tsp honey
  • 2 tbsp grated Parmesan

Instructions:

  1. Make the Marinade
In a large bowl, whisk together:
  • Olive oil
  • Lemon juice
  • Lemon zest
  • Grated garlic
  • Dijon mustard
  • Kosher salt
  • Black pepper
  • Dried oregano
  • Fresh parsley
  • Fresh basil
  • Honey
  • Grated Parmesan
Add the chicken thighs and toss until every piece is well coated. Cover and refrigerate for 4–8 hours, or overnight for even deeper flavor.
  1. Grill the Chicken
Preheat the grill to 425°F (220°C). Remove the chicken from the marinade, allowing any excess to drip off. Grill for 5–7 minutes per side, depending on thickness, until lightly charred and the internal temperature reaches 175–185°F. Unlike chicken breasts, chicken thighs become even more tender when cooked slightly beyond 165°F because the connective tissue has time to break down.
  1. Finish
Transfer the grilled chicken to a serving platter. Immediately finish with:
  • A squeeze of fresh lemon juice
  • A drizzle of extra-virgin olive oil
  • Fresh chopped parsley
  • A light sprinkle of grated Parmesan
Serve warm.
